Easy Weeknight Tahini Sesame Ramen Noodles

A go-to weeknight dish of ours is a plate of ramen noodles tossed with a quick sauce made of tahini, date syrup, soy sauce, sesame oil, and rice vinegar. It can be served in its umami simplicity or can be dolled up with tofu and veggies you have on hand. We love julienned carrots and pan-seared tofu topped with black sesame seeds. Yum!

Ingredients

1/3 cup tahini
1 tbsp unseasoned rice vinegar 
1 tbsp sesame oil
2 tbsp soy sauce or tamari
2 tbsp cold water at the end. Add slowly to thin out to desired consistency.

Stir the first 5 ingredients together in a bowl and add cold water slowly at the end to thin to desired consistency. This should be enough sauce to thinly coat two cups of cooked noodles. Ramen noodles are our favorite, but we also use chickpea noodles when we want an extra protein boost.
