Ingredients
- 1 cup of rolled oats
- 1 cup of oat milk (or other milk of choice)
- 2 medium ripe bananas
- 2 eggs (optional for a protein boost)
- 1 tsp cinnamon
- 1 Tbsp @JustDateSyrup, plus extra for drizzling
- 1 Tbsp nut butter of choice
- 1 Tbsp chia and/or hemp hearts
- 1 tsp baking powder
- Blend all of the ingredients until they form a smooth batter
- Bring a skillet to medium heat, and add a pinch of grass fed butter or coconut oil
- Use a 1/4 cup measuring spoon to portion pancake batter onto the skillet, leaving space between them as they cook
- Flip them after 2-3 minutes to finish cooking them on the other side for a few minutes
- Repeat until you've used all of your batter, top your pancakes with a drizzle of date syrup or pomegranate syrup and any of your other favorite toppings!
