Frequently Asked Questions

Our Ingredients

Why do your chocolate chips taste fruity?

Fruit is the star of the show in our chips. We start with cacao beans from the Dominican Republic and some people may not know that the cacao bean is actually a fruit! Cacao from the Dominican Republic is known to have a bright, fruity flavor (it’s super high quality). Then we used organic upcycled dates as a sweetener, so it’s all about the fruit and natural sweetness, so we’re thrilled that’s what you’re tasting.

Why did you decide to add cocoa butter?

Cocoa butter is a standard ingredient in chocolate - technically cocoa beans and cocoa butter make cocoa mass which is essentially what chocolate is!

Why do your chocolate chips only have 3 ingredients?

We believe in using the simplest ingredients, highlighting the amazing fruits from Mother Earth. All you need for delicious chocolate is: Cocoa beans, cocoa butter and organic dates. A lot of mass produced chocolate add emulsifies or stabilizers to increase shelf life or make production go faster. We want our customers to know exactly what they’re putting in their bodies, so we’re committed to the simplest possible ingredients. This is all you need for delicious chocolate that’s actually good for you! Because it’s all it truly needs to honor and highlight the naturally incredible taste of the cacao!

Where are your cocoa beans from?

We’re currently sourcing our cocoa beans from a women-owned chocolate collective in the Dominican Republic. We love these beans for their bright fruity flavor, their organic fair trade processing practices and we know there’s very little lead or cadmium found in Dominican Cocoa beans.

How do the chocolate chips go from the tree into my package?

We source organically grown cacao beans from a women owned chocolate collective in the Dominican Republic. Cacao pods are removed from the trees, then opened to retrieve the beans. The beans are broken down into liquid to become chocolate and blended into a paste with cocoa butter and organic ground dates. This is then put into a machine which gently deposits the chocolate into chips.

What is the story behind fair trade and upcycled certification?

Fair trade means the cacao and cocoa butter meet rigorous social, environmental, economic and agricultural production standards. That means safe working conditions, environmental protection and fair wages. To learn more head to: https://www.fairtradecertified.org/

Upcycled means that we’re reducing food waste. We’re using our certified upcycled date sugar in all chocolate products, and this is a product that we’ve diverted from waste. To learn more go to: https://www.upcycledfood.org/

What is date syrup?

Our date syrup is 100% organic upcycled dates, that are boiled in water and compressed down into the most delicious syrup. We gently extract the natural sugar and vital nutrients from medjool dates to bring you a rich, delicious and healthier sweet, worthy of daily sweetening. Other names that you might see for date syrup are silan, date molasses or even date honey. We don’t add anything to our syrup, no preservatives or additives.

What is date sugar?

Our date sugar is 100% organic upcycled kentichi dates. These dates are dried and then very finely ground to create date sugar with a delicious, deep caramel flavor.. It’s simply dried, ground whole dates and nothing else. Sometimes you’ll see date sugar called date powder.

How do you make your pomegranate syrup?

We start with 100% organic pomegranate juice, which we carefully reduce at a low heat to concentrate the beautiful, rich pomegranate flavor and get to the thickness of a syrup. We then add a touch of date syrup for sweetness. Our pomegranate syrup is the only one that’s available free of refined sugar and it has only two ingredients: dates and pomegranates.

Why is it called pomegranate syrup versus molasses?

While pomegranate molasses has been used in kitchens for centuries, we’ve chosen to call ours pomegranate syrup because it has so many use cases, and the thickness is drizzly, like a syrup, versus thick, like a molasses. It’s still perfect in any recipe that calls for pomegranate molasses, and also wonderful for all the typical syrup use cases: drizzled on pancakes and waffles, yogurt and oatmeal and we particularly like pomegranate syrup on vanilla ice cream.
