Chai-Spiced Orange Upside-Down Cake
Tis the season for baking! 🍊 Using our collaboration coffee cake baking mix with Stellar Eats we made a gluten-free, dairy-free, refined sugar-free orange upside-down cake and the results were *chefs kiss*. All you need to do is line the bottom of a greased pan with parchment paper, line it with thin orange slices and pour the batter over the oranges and bake according to the instructions. It’s truly that easy!

Ingredients
- 1 package of Stellar Eats X Just Date Coffee Cake Mix
- 2 ripe oranges
- 1/2 cup Just Date Chai Caramel OR 1/2 cup Just Date Syrup + whole cinnamon sticks, whole cloves, and cardamom pods
- eggs, milk, and butter (as package requires)
Instructions
- Cut out a piece of parchment the same size as the bottom of the pan
- Grease the pan, lay the parchment down and grease the parchment.
- Cut the oranges thinly with a very sharp knife and remove the peel.
- Place peeled slices in bottom on greased pan.
- Heat up Just Date x Diaspora Chai Caramel for the orange drizzle OR use 1/2 cup Just Date Syrup and simmer with whole cloves, cinnamon sticks and cardamom pods.
- Before mixing the batter, remove 1/3 cup of the baking mix that would have been for the streusel and discard.
- Mix the batter according to instructions on package.
- Pour batter over orange slices in pan and bake for suggested time on package.
- Depending on your oven, you may need to bake for 5-10 minutes longer than the suggested time.
