Ingredients
1 can chickpeas, drained
1 ripe avocado, diced
1 pint sungold cherry tomatoes
1/4 cup chopped dill
1/4 cup chopped parsley
kosher salt
fine black pepper
- 1/2 tbsp Just Date Syrup
- 1 tbsp dijon mustard
- 2 tbsp champagne vinegar
- 2 tbsp olive oil
- pinch of kosher salt
Halve sungold tomatoes (you can skip this step, but halving the tomatoes allows for the dressing and salt to seep into all those nooks and crannies!) Gently combine drained chickpeas, diced avocado, and halved sungold tomatoes with chopped dill and parsley. Season everything lightly with fine kosher or sea salt, black pepper and combine.
Whisk together The Dressing ingredients: date syrup, dijon mustard, champagne vinegar, kosher salt, and add olive oil while whisking until emulsified. Gently toss with salad ingredients. You have yourself the perfect healthy and hearty lunch!
