Chocolate-Dipped Peanut Butter Cookies
Coming to you from Candice @simplyhealthymama. These soft and fluffy grain-free peanut butter cookies are so easy to make! When paired with date-sweetened melted chocolate, they are perfectly sweet.
Ingredients
1 cup creamy unsweetened Peanut Butter with sea salt
1/3 cup @enjoyjustdate date syrup
1 egg
1/2 cup almond flour
1 Tbsp @enjoyjustdate date sugar
1/2 tsp baking soda
Melted chocolate:
3/4 cup @enjoyjustdate chocolate chips
3/4 tsp avocado oil
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Add all ingredients to a large bowl and mix to combine. Refrigerate dough for 30 minutes.
Use a medium cookie scoop to drop cookie dough onto baking sheet. Gently flatten with your hand. You should be able to make 11-12 cookies. Bake for 10 minutes. While cookies are baking, melt chocolate chips with oil in a small saucepan and set aside.
Once cookies are done baking, allow them to cool on cookie sheet. Dip half of cookie in melted chocolate and then sprinkle with sea salt. Enjoy!
