Chocolate Peanut Butter Cups
So many of us grew up loving chocolate peanut butter cups, but they are often full of preservatives and refined sugar. The solution? We've cleaned up the classic peanut butter cup recipe with the help of Just Date Syrup! The rich caramel notes from Just Date Syrup perfectly compliment chocolate and peanut butter in this healthier, delicious homemade recipe. And just between us - we think it's better than the original! The addition of Just Date Syrup also boasts a low glycemic index, high antioxidant value, potassium, magnesium, fiber, zinc - the list goes on. We're all about exceptional nutrition and exceptional flavor in our test kitchen, and this recipe checks all of those boxes.
As a note - these keep best in the fridge or freezer. We suggest serving them right before you enjoy them,which shouldn't be a problem - these are always devoured immediately when we serve them to kids and adults alike!
Ingredients
Bottom Chocolate Layer
- 2 Tablespoons Just Date Syrup
- 1/3 Cup of creamy peanut butter (almond butter or sunflower seed butter work in this recipe as well)
- 2.5 Tablespoons coconut oil, melted
- 3 Tablespoons of unsweetened cocoa powder
- 1.5 Teaspoons of vanilla extract
- Pinch of salt
Peanut Butter Layer
- 3 Tablespoons Just Date Sugar
- 1/3 Cup of creamy peanut butter (almond butter or sunflower seed butter work in this recipe as well)
- 2 Tablespoons coconut oil, melted
- 1.5 Teaspoons of vanilla extract
- Flaky sea salt for garnish
- Combine all ingredients for chocolate layer in a mixing bowl until smooth, and set aside.
- Combine all ingredients for peanut butter layer in a separate mixing bowl until smooth, and set aside.
- Line a muffin tin with mini muffin liners and spray with coconut oil, or spray a silicone mold with coconut oil. (This step isn't necessary if you don't have coconut oil spray).
- Spoon the chocolate mixture into the molds until they are filled about halfway, repeat with the peanut butter layer.
- Top with flaky sea salt, and place in the freezer until firm. Store these in the freezer until right before serving. Enjoy!
