Palitaw
A mildly sweet, gluten free and vegan Filipino dish by Rezel Kealoha. Mainly eaten as a snack or even as a dessert - the name refers to how it’s cooked - Palitaw means to show up or appear in English. Traditionally it's coated in fresh coconut and sugar, but this version is sweetened with Just Date Syrup and has a touch of cinnamon.
Ingredients
Dumpling Dough
- 1 Cup Sweet Glutinous Rice Flour
- 1/2 Cup Coconut Milk or any other milk. Water is traditionally used.
Topping
- Just Date Syrup
- 1 Teaspoon Desiccated Coconut
- 1 Teaspoon Toasted Sesame Seeds
- 1/2 Teaspoon Cinnamon
- Fill a pot of water and bring it up to a boil.
- Mix together the rice flour and milk in a bowl until it forms a dough. Using a tablespoon or mini ice cream scooper form balls with the dough. Then flatten them with your fingers to make a little disk.
- Drop the disks in the boiling water one by one so they don’t stick to each other. Now the fun part. Once the disks are cooked it pops up to the top of the pot. Hence the name - Palitaw or to appear. Cool huh?
- Once they have floated to the top fish them out and put them on a serving platter.
- To make the topping mix the coconut, sesame seeds and cinnamon together.
- To serve drizzle the cooked dumplings with Just Date Syrup and then sprinkling the toppings all over to finish.
