PB&J Chia Oat Pudding
These will become your new favorite way to make your chia pudding. If you're already familiar you know how delicious and easy chia pudding is. But this recipe takes the cake, IMHO. It's super high in all the good fats, and protein and has great sugar regulating ingredients so your day is starting off balanced.
Ingredients
2 tbsp chia seeds
2 tbsp whole oats
1 cup coconut milk or milk of your choice
1/4 tsp vanilla extract
1/4 tsp almond extract
1 tsp Just Date Syrup + more for drizzling
Topping
1 heaping tbsp of Jammy Berries or Chia Smash jam
1 heaping tbsp of nut butter of choice or Almond Cashew Coconut butter from Groundup PDX
1 tbsp hemp seeds
In a jar with a lid, mix together chia seeds, oats, milk, extract and date syrup. Mix vigoursly for 30 seconds witha whisk and let it sit. Every 3-5 minutes come back and mix it again for about the next 15 minutes. This helps it set and not clump. Put the lid on and put it in the fridge. It will set enough in about an hour but overnight is best.
When you are ready to eat, simply pour out the amount you want and add jam, nut butter and hemp seeds and swirl. Drizzle more Just Date Syrup to taste. Add blueberries or raspberries if you have them but this is delicious as is!
