Rosemary and Pomegranate Gin Sparkler
When I started batching cocktails at my holiday parties, I felt like I reached a new level of hosting. This simple 5 ingredient cocktail is a crowd-pleaser and features some of my favorite flavors of the season - tart and sweet pomegranate and fragrant rosemary. I love experimenting with different gins to change up the taste a bit so I suggest you start with your favorite and go from there. Cheers!
Ingredients
3 cups pomegranate juice
1 1/2 cups preferred gin
1/2 cup Just Pomegranate Molasses
1/2 cup of water
2 rosemary sprigs and more for garnish
Pomegranate fruit for garnish
Soda water to taste
Simmer 1/2 cup of Just Pomegranate Molasses, 1/2 cup water, and two fresh rosemary sprigs together for about 10 minutes or until reduced and becomes a syrup consistency again. Strain and let cool overnight in a refrigerator.
In a pitcher, combine pomegranate juice, gin, and rosemary pom syrup. When serving, pour over ice, top with soda water to taste, and add pomegranate arils and rosemary as garnishes.
